Last month while I was in the Stop & Shop on the east side, I noticed that they had some lamb shoulder pieces for a hella good price $1.99 a pound so I bought six packages, wrapped them up in 2 package bundles and tossed em into the chest freezer.
Since we’re starting to get some cooler temperatures I figured I make a stew of some kind. Plus I had that leftover Garam Marsala based rub from earlier to use up along with some roasted carrots from last week.
Thawed out 4 pkgs of lamb the night before,rinsed the pieces, patted them dry then dropped them all into a 2.5 gallon ziplock bag. Took the Garam Marsala spice rub which also had brown sugar,granulated garlic added to it the last time I used it and dumped it into the bag with the lamb. Grabbed some dried thyme (wish I had Rosemary instead but hey you make do with what you have) and added it to the bag along with a lil bit of kosher salt,regular and smoked paprika,plus some onion powder. Closed up the bag and shook it up and set it aside. I think the blueberry waffles that sista was making were calling me.
After the waffle break I chopped up some white potatoes and left the skin on em. Went to the oven and checked on the garlic that was roasting…nice and eye watering strong.
Heated up some veg oil in a good sized pot and went about browning the lamb pieces. Finished up with the lamb,added some more veg oil and then the chopped onions. While the onions cooked down I took the garlic out of the oven and set it aside. Added some water to the onions, then the lamb, and the potatoes. Stirred it all up, tossed in 3 dried bay leaves and let all that come to a slow boil.
Grabbed the wheat flour and white flour tossed in some more spices,added some water to make a slurry or whatever you wanna call it and stirred it into the boiling mixture to thicken it up. Reduced the heat and let it simmer for a while.
Took the leftover roasted carrots and added them to the pot. Chopped up 3 or 4 green peppers added those along with a good amount of roasted garlic and let it all simmer some more.
When was it done? When the meat was falling off the bone and the potatoes had almost disappeared I guess. How thick was it? At one point the long handled stainless steel spoon I was using was able to stand up straight in the middle of the pot! How did it taste? Pops said it tasted real good and he pulls no punches when he comments on anything. And why lamb stew? I wanted to try making something different.
